Since today's breakfast and lunch were boring old standards, I am going to skip to dinner and dessert! Iv'e spent the entire day training Daisy and trying to get her acclimated to our house. She's a rambunctious little thing!
For tonight's dinner, I took a chicken breast out of the freezer and thawed it all night. I covered it with rosemary, thyme, and poultry seasoning, then baked it in the oven on 350 degrees for a half an hour. On the side, roasted up some leftover brussel sprouts and carrots. A microwaved sweet potato rounded out a delicious meal!
Since I cannot exercise, I have to watch my daily intake so I don't gain any weight during this little setback. I was in the mood to experiment in the kitchen, looked into the fridge and looked around for some things to make a low-calorie desert to curb my sweet tooth. I found a container of vanilla Greek yogurt and a light bulb went off in my head. I added a spoonful of cocoa powder and a handful of chocolate chips to the mix and stirred it up! I popped it in the freezer for a few hours to harden and voila! Chocolate yogurt!
While I was very excited by my idea, the end result was underwhelming, as I realized I do not like the taste of vanilla Greek yogurt. Does it taste sour to anyone else, or just me?? But, if you like the flavor, this would be an amazing healthy dessert option! Give it a go and see what you think!
