Muggy Egg

Sorry for being M.I.A yesterday!! I had a hectic day at work and was super busy when I got home. When I joined my gym about two weeks ago, they told me that I got a free personal training session with enrollment. My session was last night and it was very enlightening!

The trainer, a lively woman named Sarah, took me through a fitness assessment and calculated my "body age". Apparently my body thinks it's eighteen which ain't half bad considering a a few years older than that ;)
Sarah taught me the proper way to do a plank and a push up, because I've been doing them wrong all these years. Let me tell you, my body is feeling those push up today! Total soreness in my arms and upper back. Ouch! By the time I got out of the gym it was almost 10 pm and this girl had to get to bed!

This morning, I was craving something savory instead of my usual fruit filled fare. I made an egg sandwich with cheddar cheese, turkey, and one egg on a wheat English muffin and paired it with fresh strawberries for a delicious morning meal!

My favorite part of this breakfast is the egg because, get this: it's made in the microwave. I found this "recipe" on Pinterest about a month ago and had to try it. Basically, you spray PAM in a coffee mg, crack an egg into it, add slat and pepper, then pop it in the microwave (with a paper towel on top) for about 50 seconds. Viola!! Perfectly cooked egg and the perfect size for an egg sandwich! I love it.

I am off to bed folks, have a 5:00 am workout tomorrow (I know, I'm a crazy person, but I prefer to get it out of the way!) Talk to you tomorrow!! :)

P.S.- I've also made a protein brownie in a mug that it A-M-A-Z-I-N-G. I will post that recipe another time.
