Let's just say, I have found a new breakfast addiction. These things are delicious. In fact, I have made two batches in the past two days, varying up the ingredients. One awesome thing about overnight oats is the versatility. Every blog tells you different ways to make them, and I bet they are all fantastic. Overnight oats are cold, thick, and perfectly filling (I ate some today at 8am and was barely hungry by the time lunch rolled around). Here is how I made them the first time, easy-peasy and yummy:
- 1/2 cup of steel cut oats (not instant)
- 1/2 cup skim milk
- 1 scoop chocolate protein powder
A lot of recipes call for the addition of chia seeds to make the oats thicker, but I didn't have any so I simply omitted these. If you like thicker oats, simply add less milk next time.

Ever since I hurt my knee a few weeks ago, I've been researching low impact ways to exercise that won't cause more damage to my knee. I read that swimming was the best no impact exercise one could do, but I could not find a pool to swim at since my injury. Well, yesterday I found the perfect pool!! It only charges a few dollars to come and swim for the day, and the facilities are beautiful!Yesterday morning, I got up bright and early to perform an extensive swimming workout.

I used to swim in high school, and it felt so good to be in the water again. Almost like second nature. I swam for an hour, and let me tell you, my muscles were burnin'! Swimming is great exercise!
